Just hit 90c internal with the Pastrami. Around 92c seems to be the sweet spot for tenderness. I pulled one at 85c last Friday and I noticed the difference straight away. I only pulled it that early because I needed to catch the post office before it shut.
This ones had 3 hours at 135c on the Traeger Grills Australia Ranger. ๐
